On the north of Grattequina,
the Cognac region counts six Cognac
growing areas clearly
delimited and ratified by the decree of 1938:
Champagnes, Borderies, and Bois.
Cognac AOC (Controlled Appellation of Origin)
coming from the best vineyards is an
“eaude-
vie” (literally, "water of life") and improved
by maturity in oak casks.
The diversity among the growing areas of the AOC
is expressed in the aromas and flavours,
thanks to a microclimate which is the
consequence of the meeting of the continent and
the
influence of the sea, that gives each Cognac its
own unique personality. |
